“Here is our drinks list” is the ultimate WHAT in Hospitality. This can be a drop and run experience for waiters and Guests alike! “Here is the story behind our drinks list” can be the ultimate WHY behind a drinks menu, leading to interesting conversations and experiences, driven by purpose.

We are proud partners with Hotel Hotels, in their Wild Spirit Wines of Africa program, where each glass of wine is poured with purpose, and story telling.

The initiative was borne out of Hilton’s ‘Big Five’ commitment launched in 2018, to drive sustainable travel and tourism in Africa. The “Big Five” programme supports the implementation of Youth Opportunity, Water Stewardship, Anti-Human Trafficking, Local Sourcing and Protecting Wildlife on the continent. The ’Wild Spirit Wines of Africa’ programme is focused on driving three pivotal elements from the “Big Five” – Local Sourcing, Water Stewardship and Protecting Wildlife. In collaboration with the WWF, we have collectively identified and partnered with conservation and community driven wineries, which are now leading Guest experiences in Africa and the Indian Ocean Islands.

To support the program, and drive Guest experience and waiter engagement, Under the Influence has unlocked bursaries to its Beverageintelligence University. Learners from Hilton can now take a journey through South African wine, from Level 1 to 3, and really engage in the practical wine modules, and in-depth story telling modules on offer. A specific Wild Spirit module has been created with a focus on the WHY of the drinks menu, and tips and toolkits to implement with Guests.

Each year, Under the Influence provides additional bursaries to top performing learners at Hilton, to visit South Africa, and the Cape Winelands, and meet the winemakers behind the program, and enhance their storytelling abilities.
